Paleo Chicken Adobo

This one-pot recipe calls for simmering chicken in a tangy, vinegar-based sauce, which I’ve riffed to make gluten-free and Paleo. It’s a very tasty spin on your typical weeknight chicken dinner that everyone can enjoy!
Chicken adobo is an extremely popular dish from the Philippines made with meat cooked in vinegar and soy sauce – this much is generally agreed upon. From there, ingredients and opinions vary widely. There are 7,000 islands in the Philippines, and on each one, every lola (grandmother) and tita (auntie) has their own recipe.

Paleo Chicken Adobo Recipe

 
Prep time: 10 minutes
Cook time: 45 minutes
Yield: 4 to 6 servings
 
You can also buy whole chicken legs and separate them yourself into drumsticks and thighs. You want 3 to 3 1/2 pounds of total meat.

Ingredients:

  • 4 chicken thighs, bone-in and skin on (about 1 1/2 pounds)
  • 4 chicken drumsticks (about 1 1/2 pounds)
  • 3/4 cup tamari or coconut aminos (or low-sodium soy sauce, if you don't need this to be gluten-free!)
  • 3/4 cup white wine vinegar
  • 1 tablespoon fish sauce
  • 1 tablespoon coconut sugar, honey, or dark brown sugar
  • 1/2 tablespoon coconut oil
  • 2 tablespoons fresh grated ginger
  • 2 bay leaves (dried, not fresh)
  • 1 tablespoon whole peppercorns
  • 3 cloves garlic
  • 1/4 teaspoons salt (optional)
  • 1/2 teaspoon fine ground pepper
  • Coconut rice or plain steamed rice, to serve

Try this pasta dish the next time you want a fast home-cooked meal. I promise, it’ll be quicker and healthier than ordering takeout!

Pasta Skillet with Chicken Sausage, Cheese & Spinach Recipe

Prep time: 10 minutes
Cook time: 30 minutes
Yield: 4 to 6 servings

Ingredients :

For the marinara sauce (or substitute 2 1/2 to 3 cups store-bought sauce):
  • 1 1/2 tablespoons olive oil
  • 1 1/2 cups (180g) diced red onions
  • 2 cloves garlic, minced
  • 1 28-oz. (795g) can of crushed tomatoes
  • 1 tablespoon honey or sugar
  • 1/4 cup (5g) chopped fresh parsley
  • 1/4 cup (5g) chopped fresh basil
  • 1 teaspoon dried oregano
For the pasta:
  • 8 ounces (225g) penne pasta
  • 1 1/2 tablespoons olive oil
  • 1 pound (450g) chicken sausage, cut into bit-sized pieces
  • 4 to 6 cups (100g to 150g) baby spinach
  • 1 1/2 cups (140g) shredded mozzarella cheese
  • Chopped parsley, to garnish

Easy BBQ Chicken in the Oven Recipe

    Liquid smoke adds a hint of smokiness to the chicken. Look for it with the condiments in the grocery store.
    You can easily double or triple this recipe for a larger crowd; just make sure there is a little space between each chicken leg on the pan and work in batches if necessary.

    Ingredients :

    • 2 pounds (skin-on, bone-in) chicken legs
    • 1 teaspoon salt
    • 1/2 cup barbecue sauce (any tomato- or mustard-based sauce), divided
    • 1 teaspoon liquid smoke (optional)
    Special equipment:
    • Pastry brush
    • Baking sheet
    • Metal cooling rack
